Pineapple Wild Orange Chicken Salad

Summer time is here and it is a great time to add more fruits to your diet.  Fruits may help hydrate and replace electrolytes, vitamins and minerals after sweating.  Enjoy this recipe to keep you cool during this hot summer.


4 Chicken breasts-Boneless and Skinless

2 Oranges

1 Pineapple

2 Kiwis

10 Dates-dried and pitted

2 Tbsp. Coconut Oil

Salt and Pepper

Dressing Ingredients:

1/4 c Walnuts

1 Tbsp Mint Leaves

2 Tbsp Honey or Agave

1 c Non-fat Plain Yogurt

Dash of Cayenne Pepper

1/8 tsp. Salt

1 drop Wild Orange

Dressing Directions:  In a small mixing bowl, mix yogurt, honey, salt, cayenne pepper, and Wild Orange.  Chop small pieces of walnuts and mint and add to yogurt mixture.  Mix all ingredients well.

Directions:  In a large frying pan heat up coconut oil on medium heat.  Once pan is heated add 4 chicken breasts sprinkle cayenne pepper, salt and pepper.  Cover Pan  and cook for 12 min, flip chicken over and cook for 6 more min.  Remove from heat and let cool.  Cut up all fruit in bite size pieces.  Toss fruit in a large serving bowl.  Add in yogurt mixture.  Mix well.  Slice chicken breasts and add to fruit salad.  Serve and enjoy!
